When you come to Yilan, I believe you will only think of eating "Cherry Duck", but Yilan, with its beautiful scenery, is not only famous for one kind of food. This time, we will introduce you to something different.
Recently, I stayed at "Jiaoxi Hotel" in Yilan, which launched a goose food travelogue. The "One Goose, Six Meals" special goose banquet is certainly time for the gourmets to come out again! The main character of this banquet is the Yilan White Roman goose, which has absorbed the essence of Yilan's heaven and earth, and is famous for its fat, thick, tender and juicy meat.
The Goose Banquet was hosted by the hotel's Chinese Sous Chef (Banquet Hall) - Chef Chan Hang Kit. Chef Chan has worked in many famous hotels at a young age. The reason why the Goose Banquet is "playful" is that Chef Chan himself specialises in Chinese and Cantonese cuisine, and after 20 years of cooking, he is naturally very good at traditional goose cooking skills. He is full of enthusiasm and ideas, so he is trying to do something new by combining different ingredients from different countries and a variety of cooking techniques on top of the traditional ones, so as to make a big change with everyone's taste buds and make a trip around the world. Crystal Cold Vegetable and Goose Meat
This is a creative ”cross over” between Vietnamese rice paper rolls and traditional sliced duck. The chef handily cuts up the goose meat, dips it in a special sweet noodle sauce and rolls it up with lettuce, but instead of using a lotus leaf cake, he uses a crystal-clear Vietnamese spring roll skin. The thin and chewy skin, together with the sweet goose meat and lettuce, is refreshing and delicious.
Roasted Goose Plate with Ginger and Spring Onion on Hotplate
The best Yilan three-star spring onions and ginger are stuffed into the original White Roman goose, then the skin is smeared with red vinegar sauce and slow roasted for two hours in a Hong Kong-style high-temperature oven. The classic Hong Kong style roasted goose brings out the unique sweetness of the White Roman goose, with crispy golden skin, tender and juicy goose meat, and a mouthful of green onion flavour.
Goose Crisp Crispy Cone
When we got back to Hong Kong, we flew to Italy for another cone. Instead of Gelato, the crunchy ice-cream cone was filled with stir-fried goose meat, mushrooms, onions and bamboo shoots, topped with popcorn and chopped cucumber, a mix of salty and sweet flavours that didn't offend us at all.
Half Moon Goose in Casserole with Korean Style
I heard that Master Chen came up with this dish when he was eating Korean food. The goose leg is cut into pieces, boned, coated with crispy powder and deep-fried, then stir-fried with Korean chilli sauce, and finally put into a casserole and cracked with a raw egg, which looks a bit like Korean Bibimbap (rice in stone pot). The goose meat is crispy and thick, and the sweet and spicy Korean chilli sauce makes the dish even more appetising, while the heat of the casserole doubles the flavour of the dish.
Ginseng and Goose Bowl.
A variety of nourishing Chinese herbs, including ginseng whiskers, white fungus, Chinese yam, poria, lotus seed, thickened fruit and red dates, are added to the goose rack and simmered together. The essence of the goose is melted into the broth, and the sweetness of the ginseng makes the soup a delightful treat for the tongue.
Scrambled Pearls with Goose and Salted Eggs
Finally, the chef took us to Japan to eat the famous Koshihikari rice. The rice was fried to perfection, soft and sticky with clear grains, and topped with tender goose meat and salty salted egg yolks to make it even more flavourful. I felt very satisfied after eating the fried rice which filled my stomach and warmed my heart.
