The eels at Hamamatsuya are served in two ways: grilled eel and grilled eel. I ordered the grilled eel, and then ordered the "Three Eats Eel" meal, which is a set meal of eels freshly made from live eels. The "three eel meals" is one of Hamamatsuya's popular set meals, and my food blogger friends in Hong Kong have recommended me to have this. Many people say that the portion is huge, but I think it's not really too much, it's just four small bowls, so basically a guy can finish it, and a girl, I believe it's not too difficult.

What is "three eel dishes"? It is actually a set meal, a big bowl of eel rice with kabayaki sauce, which is divided into four small bowls and eaten in four ways.

There is a Chinese and Japanese introduction to the three eel dishes on the table.
▼ The first small bowl of rice donburi, which is served straight from the bowl with no toppings, best demonstrates the work of Hamamatsuya's eel rice. The eel meat is fresh and tender, the flesh is better than Kyoto House's, and the fatty eel's outer layer is grilled to a slightly charred texture. The soy sauce and the freshness of the eel were well matched, but the rice was a little too plain, and the grains did not have the springy texture that Japanese pearl rice should have.

▼ The second bowl of the "three eel dishes" suggests that diners add a few new side dishes such as mashed yam, spring onion, sesame seeds and shredded seaweed. Yes, adding the side dishes enriches the layers of the Hamamatsuya Eel Rice, but I personally don't like it too much because too many side dishes confuse the palate, so you can see if you like it or not. It might be better if you just add them in a little bit and don't add them in too many ways.

In a second small bowl, add the mashed yam, spring onion, sesame seeds and shredded seaweed.

▼ In the third small bowl, add a half-cooked onsen egg, an ingredient favoured by diners all over the world, and I'm sure many of you will agree with me that this is a sure-fire attraction, probably because of its own fondness for onsen eggs and because the egg sauce, eel juice and the freshness of the soy sauce make a perfect match, and it would be nice to add more!
In the third small bowl, add the half-cooked onsen egg soaked in soy sauce.
▼ Finally, the fourth small bowl is filled with Hamamatsuya's own broth, "Hamamatsuya Unagi Chawanmushi Rice," which is actually a Japanese-style broth made from woodchucks and is a little sweet, but not too rich in flavour. Pouring in the eel rice and mixing it with the freshness of the fish, the broth immediately seemed to add a fresh flavour, probably because I am a particular fan of soaking rice.

On the whole, I think the "three eel dishes" set menu is a bit more playful, meaning that Hamamatsuya has deliberately arranged for diners to mix it up themselves to enhance the experience, and it doesn't have too much attraction to the flavour. The quality of the food is better than Kyoto House, and the ambience of the restaurant is much more comfortable, like a new style of Japanese restaurant. The price is not too bad compared to Kyoto House, which is acceptable.

They have grilled eel, and I ordered skewered eel.
I don't think it's burnt enough. A little more char would be better.

There is also an introduction to the nutrition of eels, and it is very professional to make good eel dishes.

The price is a bit steep, but the decor is reasonable.
