Ming Zhu Ge attracts customers with its modern take on Cantonese cuisine, with its steamed dim sum and roasted meats being the main highlights. Among these, the ‘Big Brother Char Siu’—which gained fame after international film star Jackie Chan tried it—is the most talked-about dish, ‘Big Brother’s Char Siu’ is succulent and richly honeyed, cut a full inch thick yet remarkably tender. In addition to char siu, the roast meats include the nostalgic ‘Golden Coin Chicken’ and ‘Roasted Chicken Liver’, both of which are revered by the general public as the pinnacle of nostalgic cuisine.
Then there are the ‘Pearl Prawn Dumplings’, wrapped in a crystal-thin skin. Even more worth trying is the ‘Steamed Rice with Golden and Silver Garlic and Sea Prawns’, where fresh sea prawns, split in half, are placed on top of the rice and steamed together; most of the prawns’ umami flavour infuses into the rice, and with the addition of fried and raw garlic, the dish is incredibly flavourful. In the Chinese food court at New Town Plaza in Sha Tin, Ming Zhu Ge is the obvious choice.
